The stainless steel espresso burrs are the stock burrs that ship in DF54. The Red Titanium espresso burrs have the same geometry as stainless steel espresso burrs but with an additional coating. Red Titanium coating has less retention and makes burrs last longer. Both espresso burrs are designed for grinding espresso and the will do ok job on coarse grind e.g. pour over or french press.
The brew burrs are designed for coarse grind. If you grind only for pour over or other coarse grind the brew burrs are for you. However the brew burrs cannot grind for espresso.
